The Brewing Process at Asgard Alcobev

From Grain to Glass

At Asgard Alcobev, brewing is a carefully engineered process combining advanced automation, quality control, and global standards. Every batch undergoes a structured nine-stage production journey to ensure consistency, flavor integrity, and operational excellence.

1. Milling

The process begins with precision milling. Malted barley is gently crushed to break open the kernels while preserving the husk. This prepares the grain for efficient extraction of fermentable sugars in the next stage.

2. Mashing

The milled malt is blended with purified hot water in the mash tun. Controlled heat activates natural enzymes that convert starches into fermentable sugars, forming the base structure, flavor, and body of the brew.

3. Lautering

The mash is carefully filtered to separate the sweet liquid, known as wort, from the grain solids. The grain bed is gently rinsed with hot water to maximise extraction of sugars, color compounds, and aroma characteristics.

4. Boiling

The wort is boiled for approximately 90 minutes. During this stage, hops are added to impart bitterness, aroma, and distinctive flavor profiles. The boil also ensures microbiological stability and product consistency.

5. Whirlpooling

Following the boil, the wort undergoes whirlpool separation. This rotational process collects spent hops and solids at the center of the vessel, allowing clear wort to be separated efficiently.

6. Rapid Cooling

The wort is quickly cooled using high-efficiency heat exchangers before being transferred to fermentation tanks. Rapid cooling preserves delicate flavor compounds and prepares the liquid for yeast inoculation.

7. Fermentation

Yeast is introduced into the cooled wort inside temperature-controlled fermenters. During fermentation, yeast converts sugars into alcohol and carbon dioxide while developing the brew’s characteristic flavors and aromas.

  • Ales typically ferment for 3–5 days
  • Lagers ferment for 7–10 days

8. Maturation

The product is aged under controlled conditions for up to four weeks. This maturation phase refines flavor, enhances clarity, and ensures smoothness and balance.

9. Packaging

Once matured, the final product is packaged in-house across bottles, cans, and kegs using automated filling systems. Every stage undergoes strict quality checks to ensure freshness, consistency, and compliance before distribution.
